Catch up day

Hey all! I am a substitute teacher as well as a baker/business owner. I subbed on Thursday so it set my baking schedule back a day. I usually try and take the weekend off to "reset" but occasionally I get a bit behind. Today was catch-up day. Even though I would have liked to take a day to do whatever, it sure feels good to be back on track. This business is just as much about planning as it is baking. Big events, like the next few I have coming up, require lots of planning because I am the only baker. I have to figure out what items, if any, for the event can be made far enough ahead that I can either refrigerate or possibly freeze. For instance, most breads can be frozen for a bit. I never freeze for more than 1 week and everything frozen is triple wrapped to prevent ice and freezer burn. Scones are to be made literally no more than 2-3 days before an event because they are typically somewhat dry as they are similar to biscuits. Making them too far in advance would not make for a fresh, tasty treat!
